If you have ever had the privilege of being invited to my parents house for dinner, you may have also been privileged to get to try my Mom’s amazing lasagna. (Or La Sonya as my Dad calls it) (we don’t know why he pronounces it this way–it’s just part of our lives).
Ingredients
- 1 Recipe Meat Sauce
- 10-12 Cooked Lasagna Noodles
- 2 Packages Mozzarella Cheese slices
- 3 cups Small curd cottage cheese
- 2 Beaten eggs
- 2 tsp Salt
- 1/2 tsp Pepper
- 2 Tbsp Parsley Flakes
- 1/2 Cup Parmesan Cheese
Instructions
- Mix cottage cheese, eggs, salt, pepper, parsley flakes and parmesan cheese.
- Grease a 9 X 13 baking pan
- Layer 1/2 Lasagna noodles in bottom of pan.
- Spread 1/2 Cottage cheese mixture on top of noodles.
- Layer 1/2 cheese slices on top of cottage cheese mixture.
- Spread 1/2 meat sauce on top of cheese slices.
- Repeat layers.
- Bake at 375 degrees for 30 minutes
Mom's Meat Sauce
Ingredients
- 1 1/2 pounds ground beef
- 1 whole onion--diced
- 1 clove garlic--minced
- 1 Tbsp parsley flakes
- 1 Tbsp basil
- 2 tsp salt
- 1 14.5 oz can diced tomatoes
- 1 6 oz can tomato paste
- 1 bay leaf
- 2 Tbsp green pepper--diced
Instructions
- Brown ground beef in large skillet, crumble and drain.
- Add all other ingredients.
- Simmer for 1 hour.
- Remove and discard bay leaf.
When my Mom comes to visit–she makes the real deal with her meat sauce. When I make it–I usually forget to plan ahead and don’t have time to make the fancy schmancy delicious sauce that has to simmer for an hour–so I make my quickie version. It’s the same sauce I use for my spaghetti recipe. You can get it here. It’s not AS good, but a close second.
The bottom line is that you will LOVE this lasagna so, so, so, so much.
