We have tacos at least once a week at our house–but not always on Tuesdays. To be honest, I think Super Rockstar could just rotate Taco’s, Spaghetti and Fried Chicken and be just fine. I know what you’re thinking–“I know how to make taco’s–it’s really not that hard.” That’s true. It is easy. But no–you don’t know how to make them the RIGHT way. (just kidding–I’m sure your way is just fine) But, for those of you with taco making anxiety or confusion–this is for you.
Ingredients
- 1 pound ground beef
- 1 can refried beans
- 2 cups shredded cheese
- 2 cups finely chopped lettuce
- 1 cup diced tomatoes
- 1/4 cup chopped onion
- 1/4 cup chopped cilantro
- 1 avodaco mashed up
- 1 Tbsp sour cream (and some to serve on the side)
- 1 Tbsp salsa (and some to serve on the side)
- Julio's seasoning to taste (or your favorite taco seasoning)
- 4-5 Hard taco shells
- 4-5 Flour tortilla's
Instructions
- Cook and crumble ground beef.
- Drain grease and season with Julio's (or your favorite taco seasoning) and place in a small bowl.
- Heat up refried beans in a small sauce pan. Place in a small bowl when ready to serve.
- Chopped up lettuce and place in a small bowl.
- To make the Pico--Chop up tomatoes, onion and cilantro and mix together and place in a small bowl.
- To make the Guacamole--Mash up Avocado
- Add Sour cream, salsa and Julio's seasoning (or your favorite taco seasoning) to taste.
- Mix well and place in a small bowl.
- Place shredded cheese in a small bowl.
- Heat up both hard taco shells and flour tortillas and place on a warmed plate.
- To assemble Tacos. Place a layer of refried beans on the bottom of the taco shell (or tortilla), top with the meat, cheese, lettuce, Pico, Guacamole, Sour cream and salsa.

Brown the meat and crumble.
Drain the fat and add seasoning. If you are not familiar with Julio’s seasoning, you need to get familiar. You can order it online or if you have family from Texas that REALLY loves you, they will send you some for Christmas–like ours did. And if they really, REALLY love you, they will send you several bags of the Julio’s tortilla chips that you and your entire family will eat in less than 2 days.
Heat up the refried beans in a small sauce pan.
Chop up the lettuce and place in a small bowl.
Make the Pico de gallo. Chop up the tomatoes, onions and cilantro and mix all together. Place in a small bowl.
Make the guacamole. Mash up the avocado. Add the sour cream, salsa and seasoning and mix well. Don’t over do it on the seasoning. Avocado tastes fantastic without adding a thing to it, but for the sake of a more Mexican flavored meal–the seasoning adds some kick to it.
Place the shredded cheese in a small bowl.
Heat up the taco shells. If you do this in your oven–don’t forget about them like I do and have to throw the burnt to a crisp shells and start over. The well done taco shell smell doesn’t do much to stimulate the appetite.
We serve our tacos family style. I place all of the small dishes in the center of our table and everyone just grabs what they want and shoves it in as fast as they can. It’s a bit like a feeding frenzy–kind of like you see on an episode of blue planet when sharks gobble up a school of fish in 0.2 seconds.
Might want to serve it with some margarita’s (for the grown ups)–I’ve heard that it’s good for the digestion.
