We are in the midst of football season and one of my favorite things about watching footblall is the food (no surprise there). This recipe is a GREAT one.
- 2 Cups diced cooked chicken
- 1 Cup shredded mozzarella cheese
- 1 Cup pizza sauce
- ½ Cup pepperoni (cut into small pieces)
- Pizza Dough
- Mix the Chicken, pepperoni, cheese and pizza sauce in a medium size bowl all together.
- Divide the pizza dough into 8 pieces and roll each piece into a 6"diameter circle.
- Place ¼ Cup of mixture onto each dough circle.
- Fold the dough in half over the mixture
- Turn up the outside edges and pinch together
- Place Calzones on a greased baking sheet
- Cut 2-3 slits into the top of each Calzone for venting
- Bake at 450 degrees for 10-12 minutes (or until lightly browned)
Cook the chicken:
Just a little salt and pepper on each side is needed:
Grate the cheese and cut the chicken and pepperoni into small pieces and place in a bowl:
Add the Pizza Sauce and mix thoroughly:
I usually make my own sauce which is super easy: Just mix an 8 oz can of Tomato sauce with 2 tsp. of Italian Seasoning and 1/4 tsp. of garlic salt. But, your favorite pizza sauce or marinara will do just fine.
Divide the pizza dough into 8 pieces and roll them out into 6″ circles on a floured surface:
I like to make my own dough and my favorite right now is Pioneer Woman’s Perfect Pizza. (use 1/2 recipe–since it makes a double batch). But, you can also use store bought refrigerated dough or your own favorite recipe.
Place about 1/4 Cup of chicken mixture onto each circle:
Fold in half over the mixture and turn outside edge up and pinch together:
Place on a greased baking sheet and cut 2-3 slits in the top of each calzone:
Bake in a 450 degree oven for about 10-12 minutes (or until crust is lightly browned)
My Trim Healthy Mama version of these is to use Joseph’s Pita bread instead of the Pizza Dough.
You can also use low carb tortilla’s, but I prefer the thickness of the Pita Bread. The baking time is the same.
These are great to pair with Buffalo Wings (another football watching staple) and–just so I feel healthy while I sit and stress eat watching the Cowboys for 3 1/2 hours–I add some veggies.
I would say that this meal is guaranteed good luck for your team–but alas the Cowboys lost this week. Oh well, at least it’s good comfort food and you can never go wrong with that.
