Roasted Pumpkin Seeds

- Seeds from 1 Large Pumpkin
- 3-4 Cups of water
- 2 tsp Salt (separated)
- 1 Tbsp Olive Oil or Melted Butter
- Preheat oven to 350
- Cut the top off the pumpkin
- Scoop out all of insides using a large sturdy spoon
- Separate the seeds and discard the rest
- Rinse the seeds thoroughly in a colander
- Place seeds in a sauce pan with 3-4 cups of water and 1 tsp of salt
- Boil for 9-10 minutes
- Dry the seeds on paper towels
- Place the seeds in a bowl and toss with the olive oil (or butter) and 1 tsp of salt
- Spread seeds evenly on a baking sheet and bake15-20 minutes (or until golden brown)
