Roasted Pumpkin Seeds

Ingredients
  • Seeds from 1 Large Pumpkin
  • 3-4 Cups of water
  • 2 tsp Salt (separated)
  • 1 Tbsp Olive Oil or Melted Butter
Instructions
  1. Preheat oven to 350
  2. Cut the top off the pumpkin
  3. Scoop out all of insides using a large sturdy spoon
  4. Separate the seeds and discard the rest
  5. Rinse the seeds thoroughly in a colander
  6. Place seeds in a sauce pan with 3-4 cups of water and 1 tsp of salt
  7. Boil for 9-10 minutes
  8. Dry the seeds on paper towels
  9. Place the seeds in a bowl and toss with the olive oil (or butter) and 1 tsp of salt
  10. Spread seeds evenly on a baking sheet and bake15-20 minutes (or until golden brown)
