Most of my recipes have either come from Betty Crocker or someone within my circle of family and friends. But, lately I have found myself fixated on The Pioneer Woman. I’m sure most of you have at least heard of her since she has a show on the food network and her own line of products at Walmart. If you have never given her recipes a try–I highly encourage it. You have never tasted meatloaf like this–it is ABSOLUTELY delicious!
The Pioneer Woman My Favorite Meatloaf Recipe
The Ingredients.
Place the bread in a bowl and add the milk.
Let it soak for a bit.
Add the meat, eggs, salt, season salt, pepper, parmesan and parsley.
Mix it by hand. Squishing it all together (make sure your hands are clean) Super gross, but it’s the best method.
Form it into a loaf on a broiler pan.
Lay Bacon slices across the width of the loaf.
Tuck the bacon ends under.
Ingredients for the sauce.
Mix the ketchup, brown sugar and dry mustard in a bowl.
Use a spoon to spread about 1/3 of the sauce over the whole meatloaf.
Bake at 350 for 45 minutes. Spread more sauce over the loaf. Bake for 15 minutes more

I have to admit, I was a bit skeptical when I first heard of this recipe. But, seriously, how can anything go wrong wrapped in bacon.
***If you are wanting to make it more Keto or Low Carb friendly, just use about 1/2-3/4 Cup low carb flours (almond, coconut or a blend) instead of the bread. If you want to make it lower fat, you can use turkey bacon. Super Rockstar would prefer that Turkey Bacon was never invented–he is a firm believer that bacon should never be a health food. I agree with him, but my back side screams–“take it easy woman!”.
