Every once in a while, a good ole southern comfort meal is just the ticket–even on a hot late summer evening. This one for Chicken Fried Chicken will leave you with a very full and very happy tummy.
- 2 Boneless Skinless Chicken Breasts
- 2 Cups Flour
- Salt and Pepper to taste
- Season Salt to taste
- 2 Eggs
- 1 Cup Milk
- 2 Cups Canola Oil
- Heat oil in a large skillet to medium high.
- Slice the Chicken Breasts in half and add salt and pepper to each side.
- Mix Eggs and Milk in a small bowl.
- Place Flour in a larger bowl.
- Dip each chicken piece in the egg mixture and then coat with flour.
- Place chicken pieces in hot skillet and cook for about 5 minutes (lower heat if necessary)
- Flip over and cook on the other side for another 5 minutes.
- Remove chicken pieces from skillet and drain on paper towels.
- Sprinkle both sides with season salt.

2. Mix eggs and milk in a small bowl and place flour in a larger bowl.
3. Salt and pepper the chicken pieces and dip in the egg mixture. You can use tongs or whatever if you have FOTRC (fear of touching raw chicken)–Super Rockstar suffers from this. I, on the other hand, am too clumsy to master the use of tongs–so I just use my hands.
4. Coat the chicken with flour on both sides. Set aside on a plate or platter. This is where I wish I could figure out tong use. My fingers get so coated with globs of gooey wet flour that I’m practically wearing dough gloves. And there’s no way to turn on a faucet without getting the goo all over it, so now there’s that mess to clean up.
5. Heat the oil in a large skillet to medium high.
6. Place chicken in heated skillet and cook for about 5 minutes (lower the heat if necessary). There really is no choice but to use a utensil of some sort on this one. We don’t want deep fried fingers, so I usually use a fork. You fancy pants coordinated people can flaunt your expert tong use with this step.
7. Flip over and cook for about another 5 minutes until golden and cooked through. If you’re uncertain (or have DOCD–doubts of chicken doneness)–just take a piece out and cut into it. You also can finish cooking them in the oven if you don’t want to over fry them.
8. Drain chicken on paper towels.
9. Sprinkle both sides with season salt.
