This is a Trim Healthy Mama recipe that I’ve been making for a couple of years now. In my quest to eat healthier and cut most sugar out of my life–I have found that they are a good resource for healthy recipes that taste good and that don’t make you want to cry (I should write ads for them).
- 6 cups old-fashioned rolled oats
- ½ cup Coconut flour
- ¼ cup almond flour (or use oat fiber if you're following the THM plan)
- ¾ cup whey protein powder (plain or vanilla flavor)
- 1 teaspoon salt
- 1½ to 2 tablespoons ground cinnamon
- ¾ cup Xylitol (or a stevia blend--like Truvia or Pyure)
- ¼ teaspoon pure stevia extract powder
- ¾ cup egg whites
- 1½ tablespoons vanilla extract (or 2 tsp vanilla plus 2 tsp maple extract)
- 2 tablespoons coconut oil
- nut/chocolate chips/dried fruit (optional)
- Preheat the oven to 300 degrees. Spray a large rimmed baking sheet with cooking spray.
- Combine the dry ingredients in a large bowl. Add the egg whites, vanilla, and coconut oil and stir well so all the oats get fully dampened. Stir in dried fruit and nuts if using.
- Spread the granola out on the baking sheet and bake for 45 to 50 minutes, tossing every 15 minutes.

Mix the dry ingredients in a large bowl. Add the nuts and dried fruit if you are using and mix well.
Add the egg whites, vanilla and coconut oil and stir well. I use my hands to mix so I can get it all thoroughly coated.
Spread the granola out on the baking sheet.
Bake for 45 to 50 minutes, tossing every 15 minutes. Set the timer for 15 minutes or you will forget and have burned granola. I usually make a half recipe and it is completely done after 30 minutes.
Mix in the chocolate if you are using and enjoy!
I typically eat this as a cereal or mixed in my yogurt with some fresh fruit. It smells delicious when you cook it and it tastes really good too.
