For a while now, I have followed the Trim Healthy Mama nutrition plan and I have really loved a lot of their recipes –especially this one called Egg Roll in a Bowl.
- 2 pounds thawed ground meat
- 1 large onion chopped
- 2-3 Tbsp Toasted Sesame Oil
- 4 garlic cloves, minced
- 2 tsp ground ginger
- ⅓ cup soy sauce
- 1 large head of cabbage, thinly sliced
- 4 green onions, finely chopped
- Salt and pepper
- 1 tsp red pepper flakes (optional)
- Brown the meat in a large skillet over medium heat until fully cooked.
- Turn up heat to medium high and add the chopped onions and sesame oil, and lightly brown the onions.
- In a small bowl, mix the garlic, ginger, and soy sauce and add to the skillet, then immediately add the cabbage and stir well.
- Cook for several more minutes until the cabbage is tender and wilted, stirring often.
- Turn off the heat, and add the green onions and salt and black pepper to taste.
The Ingredients:
Brown the meat in a large skillet over medium heat.
Turn up the heat to medium high and add the chopped onions and sesame oil. Cook until onions are lightly browned. You can use regular vegetable oil too, but–trust me–you’ll want the sesame oil. It makes this dish absolutely delicious!
In a small bowl, mix the garlic, ginger and soy sauce and add to the skillet. The recipe calls for garlic cloves, but I used garlic powder instead. Also, they use 2 tsp of ginger, but I found that kind of overpowering–so I only use 1.
Add the cabbage and stir well. When you put the cabbage in the skillet, it will look like there is absolutely no way it’s going to fit. Just trust me–it wilts pretty quickly. But, as you stir, you might need to scoop up some rebel pieces that escape.
Cook for several more minutes until the cabbage is tender and wilted stirring often. The “stirring often” is the key phrase here–this is to ensure you don’t burn the cabbage. There is no worse smell on this planet than burned cabbage.
Turn off the heat and add the green onions and salt and pepper to taste. I didn’t have any green onions on hand, but I’m sure they would make this quite tasty.
Sprinkle with the red pepper flakes (if using). Super Rockstar like the extra spicy kick the red pepper flakes offer–I do not. This dish is all about finding unity even in our differences.
