Who wants a boring old tostada, when you can have a fancy pants one? Super Rockstar showed me how to make these a few years ago–I’m not sure if it’s his own invention or if he’s been secretly looking at Pinterest, but either way–these are a easy to make and a fun spin on Taco (or Tostada) Tuesday.
- 6-Corn tortilla's
- Cooking Spray
- Seasoning (I use Juio's)
- 2-Regular sized muffin tins
- Turn the muffin tins upside down.
- Spray with cooking spray.
- Heat the tortilla's in the microwave for about a minute (so they are nice and soft)
- Arrange the tortilla's in between the bumps of the muffin tin so that they make a bowl shape.
- Spray the tortilla's with cooking spray
- Add seasoning to each tortilla
- Bake in a 425 degree oven for 5-8 minutes.
- The Ingredients.
2. Heat tortilla’s in the microwave. I keep them in the bag so that they don’t dry out.
3. Arrange the tortilla’s in between the bumps on the upside down muffin tins. Since the tortilla’s are nice and soft, they should sit nicely between four of the bumps with the sides laying down a bit in between. It makes kind of a flower shaped bowl (so fancy).
4. Spray tortilla’s with cooking spray and sprinkle with seasoning. Julio’s is my favorite, but you can use any of Mexican flavored seasoning or just plain ole season salt.
5. Bake in a 425 degree oven for 5-8 minutes. I recommend starting with 5 minutes and then doing about a minute at a time after that. They can easily go from perfectly golden brown to a burnt crisp in a matter of seconds.
6. Enjoy! Fill them with your favorite taco ingredients and chomp away.
We love taco’s, but these tostada’s are a close second. Making them the fancy pants way? It’s like you are your own 5 star restaurant.
