Everyone seems to have a favorite No Bake Cookie recipe–this one is mine. It’s has all the elements required to be a favorite recipe: it’s easy, there’s only a few ingredients, and–most importantly–it’s chocolate.
- 2 cups sugar
- 3 tablespoons unsweetened cocoa powder
- ½ cup milk
- ¼ cup butter
- 1 teaspoon vanilla
- 3 cups quick oats, uncooked
- Add milk to sugar and cocoa in a sauce pan on medium high heat.
- Cook about 5 minutes stirring frequently until sugar dissolves.
- Add butter and boil for 1 minute.
- Remove from heat, add the vanilla and oats.
- Drop by spoonful on parchment or waxed paper.

Cook about 5 minutes stirring frequently until sugar dissolves. I don’t know about you, but I’m never confident about a recipe that calls for “dissolving sugar”. Is it dissolved? Isn’t it? I don’t know–it’s a terrible insecurity I have.
Add butter and boil for 1 minute.
Remove from heat, add the vanilla and oats. Mix it really well.
Drop by spoonful on parchment or waxed paper. Because there are many variables that can effect how quickly the mixture sets: humidity, altitude, did the sugar really dissolve? –don’t dilly dally on this step. In an ideal world the mixture is still pretty liquidy when you spoon it onto the paper and sets up within a few minutes. In a not so ideal world–it has hardened like cement before you remove the pan from the stove–you’ll have to start over if this happens (or just eat it straight out of the pan). And in a really crummy world it stays in a liquid state–in this case, you can freeze them and they are still quite tasty.
