This recipe for Egg Rolls is relatively simple and is absolutely delicious. A few years ago, I shared a Trim Healthy Mama Recipe for Egg Roll in a Bowl. Just click the link to get that recipe–you’re going to need it to make the Egg Rolls.
1. The Ingredients. One batch of Egg Roll in a Bowl (click the above link to get the recipe) and one package of egg roll wrappers.
2. Moisten edges of Egg Roll Wrapper. Lay an Egg Roll Wrapper on the counter (or any flat surface) with points up and down and the moisten edges. I used a paper towel dipped in water, but you could also use a brush.
3. Place on large spoonful of Egg Roll in a Bowl mixture on bottom half of wrapper.
4. Fold up bottom, then sides, and then fold down the top (like an envelope). The damp edges should seal in place.
5. Repeat for all wrappers.
6. Heat oil.
8. Fry 4-5 Egg Rolls at a time. Work quickly. As soon as they hit the oil, they’ll get browned quickly. Flip them over and let brown on other side.
9. Remove from oil and let drain on dry paper towels. Repeat until all egg rolls have been fried.
10. Enjoy!
I made 18 egg rolls this time and all but 3 got gobbled up. By lunch the next day–they were all devoured. We love them served with “Musashi” Fried Rice. Just click the link to get the recipe for that.
