I post coleslaw recipes in March and now at the end of April I’m sharing a hot soup recipe. What’s next–Christmas cookies in July? Who knows? This soup has become an absolute essential for days when we aren’t feeling great, when we need something comforting, and just when the mood suits us. It is SO much tastier than the canned kind AND a lot healthier for you too.
- 1 chicken breast
- 1 can of chicken Broth
- 1 medium carrot
- 1 celery stalk
- ½ cup chopped onion (optional)
- Spaghetti noodles (about 2oz)
- salt and pepper to taste
- Bring the broth and a can of water to a boil.
- Slice the carrots and celery (and onion if using)
- Cook the chicken in the boiling broth.
- Remove chicken and add noodles to broth.
- Cut the chicken into small chunks.
- When noodles have softened add chicken and all vegetables to the broth.
- Season with salt and pepper
- Simmer until noodles are done.
The Ingredients.

Slice the carrots and celery (and onions is using).
Cook the chicken in the boiling broth. Cooking the chicken in the broth makes the broth even more flavorful. If you REALLY want a gold star–make your own broth by boiling down chicken with the bones in it. But, for sake of time I used canned kind. (I feel like I used the word “broth” a lot) (broth) ( I can’t seem to stop now)
Remove the chicken and add the noodles. I use spaghetti noodles cut in half, but you can use whatever kind of pasta you want to. Also the amount of pasta is up to you too. I like a lot of noodles , but if you’re less of a noodly type of person–use less.
Cut the chicken into small chunks. You can season the meat at this point too–it will give your soup even more tasty flavor.
When the noodles have softened, add the chicken and all vegetables and salt and pepper to the broth (last one–I promise). Sometimes I add diced onion, but mostly I like it with just the carrots and celery.
Simmer until noodles are done.

This makes 1-2 servings– so just multiply if you are making it for your family (use those mad math skills you’ve been honing in helping your children with their online school–make it a story problem if you like). It takes all of about 15 minutes to make and is SO delicious and satisfying.
