Today is Cinco de Mayo–which, if you didn’t know, is the date observed to commemorate the Mexican Army’s victory over the French Empire at the Battle of Puebla, on May 5, 1862, under the leadership of General Ignacio Zaragoza. I did not know this. I just looked it up. To me Cinco de Mayo has always been a day to celebrate Mexican culture by participating in the eating of their food (tacos) and drinking of their drinks (margaritas).
Today just also happens to be Tuesday–as in TACO Tuesday. I believe we are witnessing a miracle here folks. Cinco de Mayo on Taco Tuesday. It would be a travesty against humanity if you didn’t eat tacos today. So, just in case you need some culinary inspiration on the intricate art of making delicious tacos–here is a recipe I posted last year. Just click on the link.
