My garden didn’t exactly thrive this year–except for one plant: my zucchini. It’s given and given and given. So, I needed a recipe to relieve me of some of the abundance. I’d seen recipes for Zucchini Boats over the years, but never had the occasion to try it. They are DELICIOUS!
- 2-4 Whole Zucchinis
- 1 Cup Cooked Chicken--diced.
- 2-4 Slices of Bacon cooked and broken into pieces.
- 20 slices of pepperoni cut into pieces
- ½ Cup Pizza Sauce
- 1 Cup Grated Cheese
- Preheat oven to 400 degrees
- Cut zucchinis in half and then lengthwise.
- Scoop out seeds
- Place on a greased cooking sheet and bake for about 5 minutes until softened.
- Mix chicken, bacon, pepperoni, ½ cup Cheese and pizza sauce in a medium bowl.
- Fill the zucchini boats with the mixture..
- Top with remaining cheese
- Cook until cheese is melted.

2. Preheat oven to 400 degrees.
3. Cut zucchinis in half and then lengthwise. My zucchinis were huge so skip the cutting in half if they’re small ones.
4. Scoop out the seeds and place on a greased cooking sheet. I sprayed mine with butter and added a little salt.
5. Bake for about 5 minutes or until softened and then remove from oven.
6. Mix chicken, bacon, pepperoni, 1/2 cup cheese and pizza sauce in a medium bowl. Where you scooped out the seeds, it should have created a little bowl to place the mixture in.
7. Fill the zucchini boats with the mixture and top with the remaining cheese.
8. Bake until cheese melts.
9. Enjoy. These were a huge hit for my family–which is a big deal. Any time I can get my boys to eat something with any sort of vegetable, let alone zucchini–it’s a homerun. We topped them with some sour cream and that added a nice finishing touch.
