You don’t necessarily HAVE to make these just on Saturdays, but in my home–I only make “fancy” breakfasts on the weekends. This is a Betty Crocker recipe I have been using for years.
- 1¾ all-purpose flour
- 1 Tbsp baking powder
- ¼ tsp salt
- 2 egg yolks
- 1¾ cups milk
- ½ cup cooking oil
- 2 egg whites
- In a mixing bowl combine flour, baking powder, and salt. In another bowl beat egg yolks slightly. Beat in milk and oil. Add egg yolk mixture to flour mixture all at once. Stir till combined but still slightly lumpy.
- In a small bowl beat egg whites till still peaks form (tips stand straight). Gently fold beaten egg whites into flour and egg yolk mixture, leaving a few fluffs of egg white. Do not overmix.
- Follow manufacturers directions for your waffle baker.

3. In a small bowl beat egg whites till stiff peaks form. Pro tip–when trying to SHOW beaten egg whites, don’t use a white bowl. Basically they’re ready when you touch the top with a finger and as you pull up it leaves a “peak” of egg white and doesn’t sink back down.
4. Fold the egg whites into the flour/egg mixture. Do not over mix. I always feel so much pressure when a recipe says this. Did I over mix? Did I under mix? What does it MEAN?! Just go with what feels right to you.
5. Follow manufacturers directions for your waffle maker. Pro tip: Open up your waffle maker before you plug it in to heat it up. Just to, you know, make sure there isn’t some gross old waffle still in there from the last time (probably several weeks ago) you made waffles.

or any other toppings you can think of. I usually put a few chocolate chips on top for my boys. I’ve tried making them by putting chocolate chips in the batter and my family thinks that it’s too much chocolate. I like mine with a little whip cream and strawberries. Mmmm!
