I found this recipe for Focaccia Bread about 10 years ago. The original was in a Kelly Minter Bible study workbook of all things. I make it at least once a week to go with spaghetti, but it also is really delicious by itself.
Ingredients
- 1 package yeast
- 1/3 cup hot water
- 1 tsp sugar
- 2 cups flour
- 7 Tbs cold water
- 1 Tbsp olive oil
- 1 tsp salt
- 2 Tbsp parmesan cheese
Instructions
- Put yeast in a large bowl
- Add sugar and hot water and mix well
- Allow to sit for 10-15 minutes or until frothy
- Add flour and mix well
- Add cold water one tablespoon at a time, mixing thoroughly until dough forms together.
- Kneed dough and form into a ball
- Spray a baking pan with non stick spray
- Hand press ball of dough into an approximately 8" square
- Spread oil over entire surface
- Sprinkle salt and paremsan cheese over entire surface
- Bake at 424 degrees for 10 minutes
- Cut into 1/8ths and then in half

Add the flour and mix well.
Add the cold water, one table spoon at a time mixing thoroughly until dough forms together.
Knead the dough with your hands and form into a ball.
Spray a baking sheet with nonstick spray.
Press the ball of dough by hand into an 8″ square.
Spread olive oil over entire surface.
Sprinkle salt and parmesan cheese over entire surface.
Bake at 425 degrees for 10 minutes.
Slice it in 1/8th’s and then in half.
As I mentioned, you can serve this bread with a pasta meal, by itself or even with salads. We like it dipped in a mixture of olive oil and parmesan cheese. You can also add other spices like Rosemary or basil to give it a little kick, but my boys won’t eat anything that has suspicious looking green flecks in it. Sigh.
This recipe is very quick and easy, but it looks and tastes like you spent all day working on it. I won’t tell if you don’t.
