Boil whole potatoes in water.
Allow them to cool (or soak them in cold water for a couple of minutes).
Peel the potatoes and then grate them into a large bowl.
On low heat melt the butter and cheese together in a medium saucepan--stirring often.
Add the sour cream, onion, salt and pepper and mix well.
Pour mixture into bowl with potatoes and use a large spoon to combine it all together.
Spread potato mixture into a 9 X 13 baking pan.
Dot the top of the with small scoops of butter.
Sprinkle with paprika.
Bake at 350 degrees for 30 minutes.
