Recipe–Trim Healthy Mama Cowboy Grub

If you’re not familiar with Trim Healthy Mama, I highly recommend them for awesome products and cookbooks for healthy eating and weight loss. This is a favorite of mine and my family really enjoys it too. I usually make half of their recipe, and it is plenty for my family of four.

Ingredients Method

Ingredients
  

  • 2 pound Ultra lean meat (ground beef, chicken or turkey)
  • 3 cup mixture of chopped onion, bell pepper, and celery
  • 2 cup cooked brown rice
  • 1 can diced tomatoes or Rotel tomatoes
  • 1 can pinto beans
  • 1 can corn
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp cayenne pepper (optional)

Method
 

  1. Brown the meat in a large skillet. If the meat is not at least 96% fat free, rinse it under very hot water after cooking, then return it to the skillet.
  2. Add the onion/bell pepper/celery mix and stir until tender.
  3. Add cooked rice and remaining ingredients and heat all together.

2. Brown the meat in a large skillet. If you have a higher fat content meat, there is a trick about rinsing the cooked meat in hot water. After it’s cooked, I place it in a colander and let hot water wash over it. Then return it to the skillet. It gets rid of some of the fat content.

3. While the meat is cooking, prepare the rice.

4. Add the onion/bell pepper/celery mix to the meat. Heat until vegetables are tender. You can buy individuals of these veggies and chop them up OR most grocery stores sell mixes of them in the frozen food section.

5. Add the cooked rice and all the remaining ingredients and heat all together.

6. Enjoy! You can serve it on it’s own with a side salad or have warmed tortillas and make burritos. It’s delicious either way.
